CALIFORNIA ALMONDS RAISE THE BAR
As The Nut Of Choice in Bakery/Patisserie

 

raising the barTHE ALMOND BOARD OF CALIFORNIA (ABC) was a proud first-time sponsor of the World Pastry Cup (WPC), held in Lyon, France, last month. Taking place during Sirha, the International Hotel Catering and Food Trade Exhibition, the 20th annual WPC spectacular brought together the world's most talented pastry chefs for a contest dedicated to gourmet sweet creations.

After an intense two-day competition between 22 international teams from ABC's major markets, Team France won the cup with their almond-titled dessert Amande (almond)-Zonie.

ABC used the WPC and Sirha to launch the art of Amanderie, a hybrid of the French words amande and patisserie. Amanderie is the discipline of innovating classic almond applications in bakery, patisserie and artisanal chocolate, and celebrates the French origin of over 20 creations for which almonds are essential. Team France has been tapped to help spread the word about California Almonds as ABC expands its messaging into this important global category.

raising the barThe WPC sponsorship, marking the premiere of ABC's global bakery/patisserie strategy, mandated the inclusion of California Almonds in two of the competition categories. The California Almond message was replayed in all WPC program materials, photo opportunities, prize giving, media interviews and gala dinner festivities.

ABC also helped unveil a special 20th anniversary dessert, created by 30 of the world's most acclaimed patisiers. Consisting of layers of chocolate mousse, almond praline and fruit with chopped almonds, the dessert will be promoted and replicated in patisseries and restaurants around the world.

Sirha attracted over 140,000 visitors, and industry professionals took advantage of the thousands of ideas on display to diversify and refresh their menus. The ABC booth reinforced and promoted the global message of California Almonds' essential place in bakery and patisserie today and in the future.

MAINTAINING readily retrievable records of your farm's operations is essential when it comes to food safety. Records should include areas such as fertility management, pesticide and foliar applications, worker training programs, servicing of sanitary facilities, diagrams of adjacent land use and operations, and water source and quality information. Documentation maximizes your investment in risk reduction; without documentation there is no proof that your food safety program exists.
