Almond Crusted Mahi Mahi Sticks created by: Mitzi Dulan

ingredients

20 oz. mahi mahi, thawed
1 cup sliced almonds
1/2 cup whole wheat bread crumbs
1/2 tsp sea salt
2 eggs
Almond Butter Dipping Sauce (recipe below) 

Almond Dipping Sauce:
1 cup almond butter
1/4 cup lemon juice
4 tsp light soy sauce
1 tsp almond oil
1/4 cup water to thin


preparation
Preheat oven to 450 degrees F. Spray a baking sheet with non-stick spray.
Slice the fish to make ‘sticks’ about 1-in. wide and 2-in. long.
In food processor or blender, pulse together sliced almonds and bread crumbs until combined; transfer mixture to a bowl.
In a small bowl, beat together eggs and salt.
Dip fish sticks into egg mixture, then thoroughly cover with the crumb mixture; pressing until well coated.
Arrange fish sticks onto baking sheet not allowing them to touch.
Bake fish sticks 15-18 minutes or until lightly browned. Rotate baking sheet after 8 minutes.
Note: Smaller fish sticks will cook more quickly.

Almond Dipping Sauce:
In a food processor or blender, combine all ingredients thoroughly adding water gradually to reach desired consistency. Serve with fish sticks.
