3 cups cooked white and wild rice*
2 oranges, peeled and sectioned
1 apple, chopped
2 Tbs. currants
1/4 cup finely diced red onions
2 cups cooked cubed chicken breast
1/2 cup whole natural almonds, toasted
Light Orange Dressing (see below)
*Or use 1 package (6 oz.) long grain and wild rice mix, omitting herb seasoning during cooking.
Light Orange Dressing : 1/3 cup almond or olive oil
1/4 cup fresh orange juice
1 Tbs. parsley
2 tsp. lemon juice
1/4 tsp. salt
1/8 tsp. black pepper
Combine all ingredients, except Light Orange Dressing, in mixing bowl. Toss with dressing; mix thoroughly. Chill 2-3 hours to allow flavors to blend.
Light Orange Dressing : Combine all ingredients in mixing bowl. Whisk until thoroughly blended.
