Chocolate Kirsch Cake with Fantastic Frosting created by: Almond Board of California

servings 8 to 10
ingredients
2 layers (9-inch) chocolate cake
6 tablespoons Kirsch
3/4 cup sugar
1/2 cup water
1 tsp. cornstarch
6 egg yolks, lightly beaten
1 1/4 cups butter or margarine, softened
1/8 tsp. salt
1/2 tsp. vanilla
2 oz. unsweetened chocolate
1/2 cup almond paste
Toasted sliced almonds

preparation Sprinkle cake layers with Kirsch; wrap in Saran and set aside. Combine sugar, water and cornstarch in saucepan; boil gently until thermometer registers 238 degrees. Lightly beat egg yolks in small mixing bowl; pour syrup in slowly, beating constantly until light and fluffy. Cool. Beat butter, salt and vanilla into fluffy mixture. To make cake frosting, melt chocolate slowly in top of double boiler; beat into 1 1/4 cups fluffy mixture. For filling, crumble almond paste into remaining fluffy mixture; beat until smooth. To assemble, spread filling on one layer; stack with other layer and cover top and sides with frosting. Keep cake chilled if being held overnight. Best served at room temperature, garnished with toasted sliced almonds.
