California Almond Tabbouleh created by: Almond Board of California

servings six, 3-oz. portions
ingredients
1 cup whole natural almonds, toasted and diced
1/2 cup fresh parsley, minced
1/8 cup fresh mint, minced
1/8 cup yellow onion, finely chopped
1/2 cup tomato, small dice
1/2 cup cucumber, small dice
2 Tbsp. almond oil
1 1/2 Tbsp. fresh lemon juice
1 tsp. kosher salt

preparation
In a heavy bottomed pan over medium heat, toast the almonds to a golden brown, stirring often. Allow to cool and then combine with remaining ingredients in a large bowl. Allow to marinate for several hours prior to serving.
Store in the refrigerator in an airtight container until ready to use.
