servings 6-8
ingredients 3 Hass avocados, peeled and pitted
10 grape tomatoes, quartered
1 cup smoked almonds, chopped
1/4 cup sliced almonds
1/4 cup red onion, chopped
1 lemon, juiced
2 cloves garlic, chopped
1 teaspoon cumin
1/2 tsp cayenne pepper
1/2 tsp smoked paprika (hot, if you can find it; optional)
1/2 tsp ground pepper
1/4 cup cilantro, chopped
Sea salt to taste
Lime wedges and cilantro for garnish

preparation Put the pulp from 2 avocados into a medium sized bowl. With a fork, mash the avocado lightly. Add onion, garlic, smoked almonds and spices; stir together until well incorporated.
Score remaining avocado halves to make large chunks and add to bowl; add tomatoes, lemon juice and cilantro and stir gently.  Cover and refrigerate for at least 30 minutes.
Before serving, gently stir again, then transfer almond avocado dip to a festive bowl; Garnish with more cilantro and lime wedges and serve with pita chips or tortilla chips, and carrot, cucumber or zucchini ‘coins’ for scooping.
