Our moderator, Alicia Woodward, editor-in-chief of Living Without magazine, will lead the discussion with Shelley Case, RD, North America’s leading expert on the gluten-free diet and author of Gluten-free Diet: A Comprehensive Resource Guide, and Elana Amsterdam, gluten-free meal planning and recipe expert and author of the The Gluten Free Almond Flour Cookbook. Alicia Woodward, LCSW is editor-in-chief of Living Without magazine, the national lifestyle magazine for people with allergies and food sensitivities. In its 12th year of publication, Living Without is the nation’s leading magazine for people with celiac disease, gluten sensitivity and food allergies. Alicia is also a licensed psychotherapist who ran a private practice in Charlottesville, Virginia. As a therapist, she specialized in the psychological and social aspects of living with chronic medical disorders, including food allergies and sensitivities.
Shelley Case, RD is a registered dietitian and leading North American nutrition expert on celiac disease and the gluten-free diet. A popular speaker at major consumer, health professional and food industry conferences, Shelley is also frequently called on by national television and radio stations as an expert guest on celiac disease and gluten-free living. She is author of many articles and books, including her national best seller, Gluten-Free Diet: A Comprehensive Resource Guide that is highly recommended by physicians, dietitians, celiac organizations, consumers and the media.
Her website features articles, podcasts, a free newsletter and many other resources about celiac disease, gluten sensitivity and the gluten-free diet for both consumers and health professionals.
Elana Amsterdam. Elana's Pantry is the creation of eco-entrepreneur and gluten-free guru Elana Amsterdam. Elana shares weekly recipes, ingredient selection, food purchasing, and preparation tips with the readers of her book, articles and visitors to her website . In fact she has 100,000 unique hits and 1 million page views per month.
She has written for publications including The Denver Post, Delicious Living, Shape Magazine, and has been featured in a variety of publications including Crain’s New York Business, Fortune Magazine and The Wall Street Journal, and has appeared on CNN and MSNBC.
