Almond Board of California was proud to be a premium gold sponsor of the Culinary Institute of America’s (CIA) 12th Annual Worlds of Flavor International Conference Frontiers of Flavor: World Street Food & World Comfort Food. The event is a flagship conference and is widely acknowledged in North Anerica as an influential professional forum on world cuisines and trends.
Almonds complement a wide array of flavors, ingredients and international cuisines – including some traditional favorites that were celebrated at the CIA’s signature event. On Saturday, Nov. 14, the agenda featured the seminar Mediterranean Fresh: An Odyssey of Flavor Dynamics and Small Dishes with renowned cookbook author Joyce Goldstein as the moderator and almond industry Chef John Csukor as presenter. Chain operators, food service executives and members of the media could see and taste the customary preparations for several dishes and hear practical tips for how to translate the concepts into scaled-up versions for foodservice. Romesco sauce, aka “Catalan ketchup,” is one example of an old world comfort classic ready to perk up North American menus!
