An Almond for Every Taste 

Ever find yourself wishing for an ingredient that could provide unlimited versatility and adapt to any type of cuisine? You’re in luck, California Almonds could be just what you’re looking for.

A 2006 study conducted by Sensory Spectrum, Inc., developed a comprehensive sensory lexicon of the appearance, aroma, flavor, and texture of California Almonds. It evaluated 36 samples of raw almonds representing 20 different almond varieties drawn from sources across California. 

 

 

 

The Almond Sensory Lexicon contains a total of 86 attributes and definitions:

  • 15 appearance terms
  • Nine aroma terms
  • 36 flavor aromatics
  • Three basic taste and four chemical-feeling factor terms
  • 19 textural terms
