Fresh cilantro, lime, and cayenne pepper give an extra kick to this unique recipe. Serve with chicken, any fish (especially salmon), shrimp, or as a flavorful dip.
1/4 cup sliced almonds
2 tablespoons unsalted butter
2 scallions, thinly sliced, including green tops
2 tablespoons capers, drained
1 clove garlic, minced
3/4 cup sour cream
2 tablespoons chopped fresh cilantro
1 1/2 teaspoons fresh lime juice
1/2 teaspoon fresh grated lime zest
Pinch of ground cayenne pepper
Place almonds in a single layer in a dry skillet, and turn heat to medium. Toast for about 2 minutes, stirring occasionally. Melt the butter in a medium skillet over medium heat. Add the scallions, capers and garlic, and cook, stirring constantly, 1 to 2 minutes or until scallions are softened but retain their bright green color. Transfer mixture to a medium bowl and cool slightly. Stir in sour cream, almonds, cilantro, lime juice, lime zest and cayenne.
