Lisa, Tucson, AZ Nuts are a great snack for Diabetics. You can take a bunch of different types of nuts, roasted but unsalted (if you watch the sodium) and add strawberries or bananas (or both), a dollop of whipped cream and you have a nutritious dessert that won't raise your blood sugar too much. Any fruit goes well with almonds.

Bobbye, Travrse City, MI Enhance and rejuvenate left over 'traditional green bean casserole'. Make a mixture of slivered almonds, oatmeal, butter, red and pepper flakes Stir left over green bean casserole, sprinkle with almond/oatmeal topping and bake for 10-15 min @ 324 F for 15 minutes, until toping browned crusty.

How do you use almonds to add crunch and nutrients to your breakfast?
Barb, Fargo, ND When I make instant oatmeal, I chop a handful of raw almonds while the oatmeal is cooking and sprinkle on top of oatmeal when it is done, along with a handful of dried cranberries or raisins. The more chewy crunch, the better! YUM!

Bobbye, Travrse City, MI I like to add some roasted almond slivers on top of scrambled eggs. This is an interesting and different source of protein, adding texture to them without adding extra fat.

Good news about good fat: U.S. Dietary Guidelines recommend that the majority of your fat intake be unsaturated. One serving of almonds (28g) has 13g of unsaturated fat and only 1g of saturated fat
